When I visited France recently, well to be more specific, Bordeaux, I ended up in an oyster restaurant that didn’t have anything to offer a vagan (me!) except a zucchini & eggplant salad – which I confess didn’t make me very excited.
But I had to take back my words (or rather my thoughts) when the food came! it was one of the most delicious creations of its kind that I’ve ever had and I was left really wanting more!
The traditional Spanish ‘pisto’ recipe from Andalusia varies a lot in flavour from chef to chef, but it always has lots of onion, garlic and tomatoes. The other main vegetables are usually eggplant and/or zucchini straight from the summer vegetable garden.
I love this easy vegan potato salad recipe even though I’m not a fan of traditional potato salads. They always have too much mayonnaise, too much potato and are just, well, not my favourite choice of salad.
But this easy vegan potato salad, well that’s a different story! It has loads of salad veggies and a few potatoes and tons of flavour. I got the inspiration for this tasty dish back in 1992 when I was living in Italy and the couple with whom I was staying used to make a similar dish to this potato salad, as a meal to take on a picnic. And back then I thought, wow this is the first potato salad I like!
Patatas a lo Pobre is a yummy, traditional Spanish potato recipe from Andalusia. It’s often used instead of the more normal deep-fried potato chip and you can find it on the menu in local eateries or ‘ventas’ as an accompaniment to the main meal. If you’re gluten free and vegan, it can be tricky to eat out in a normal Andalusian bar, unless you’re happy with a chopped tomato or bowl of lettuce – and if you’re lucky, some chips.
