Easy Cauliflower Salad – Deliciously Different!

This easy cauliflower salad’s so quick to make you can throw it together for a quick lunch or make it to accompany other salads – a new flavour to your salad platter.

#1 Break up some cauliflower florets into smaller florets and put them into the blender along with some sprigs of fresh parsley. Do a few florets at a time to stop the blender from getting blocked and empty the ground cauliflower into a bowl as you do it.

Once you’ve ground the cauliflower, choose what other ingredients you’re going to add to your cauliflower salad. I added 1 tomato, some sweet corn, spinach leaves and some fresh broad beans from the garden, but you could make it with lambs leaves, cucumber, red pepper and cherry tomatoes, or any other vegetables of your choice.

Mix the ingredients together in a bowl and add the dressing of balsamic vinegar and extra virgin olive oil. You can serve this easy cauliflower salad on top of a bed of lambs leaves or spinach . . .

  • Cauliflower florets
  • Fresh parsley
  • 1 tomato, finely chopped
  • 1/2 tin sweet corn
  • Cup full of fresh broad beans or chopped cucumber
  • Fresh spinach leaves or lambs leaves


  1. Grind the cauliflower florets in the blender along with the fresh parsley.
  2. Add the other ingredients and mix well.
  3. Serve on a bed of spinach or lambs leaves.
  4. Dress with balsamic vinegar and extra virgin olive oil.


You can add anything of your choice to this salad - garlic, pepper, spring onion...whatever takes your fancy!
