This easy fresh green beans recipe brings you a simple way to make your greens tastier and to give them a taste just that little bit different.
Make sure you use fresh beans that look plump and smooth when you buy them. Trim off the tops and tails and cut the beans to the size you want to eat them or leave them whole, whichever you prefer.
Heat a little water in a pan, just enough to cover the beans, and bring it to the boil. Add a pinch of salt and cover with a lid. Turn the heat down so that the water simmers vigorously.
Don’t let the beans finish cooking in the water. Instead, when they’re just par-boiled and beginning to get soft, drain away the excess water and leave just a little bit, like a teaspoon, in the bottom of the pan.
Turn off the heat, pour in a little olive oil and check that the beans have the right amount of salt for your taste. Then put the lid back on and leave the beans to steam for 10 minutes.
You’ll have to check them and, if necessary, return the pan to the heat, but it’s best when the beans finish off perfectly just standing in the steaming pot.
This way of cooking your veggies means they keep more nutrients and they stay a lovely bright green colour. And they taste much more delicious.
When you’re ready to serve, sprinkle the beans with sesame seeds, turn on the heat and toss the beans until hot through and a tiny bit stir fried.

- Sesame seeds
- Olive oil
- Par cook the beans in a little boiling, salted water.
- Pour away the excess water.
- Add some olive oil to the pan, cover and leave the beans to steam for about 10 minutes.
- Toss the beans with olive oil and sesame seeds just before ready to serve.
