Easy Vegan Sour Cream Substitute

Vegan sour cream substitute in a bowl

This vegan sour cream substitute is so easy to make. It doesn’t taste the same as sour cream but it goes really well on top of nachos or to contrast a spicy sauce – or just to serve on the edge of a spicy dish.

In other words, whenever you would use a bland sauce or sour cream, you can use this.

Cashew Nut Vegan Sour Cream Substitute

You almost couldn’t get any simpler than this recipe.

Blend a cup of cashew nuts with a little water, salt, lemon juice and apple cider vinegar. Taste the blend and adjust to taste.

You can soak the cashews overnight  to  make the vegan sour cream sauce smoother if your blender doesn’t manage to get the nuts completely blended.

I must admit, I make this without soaking as I don’t mind if there’s a little bit of bite in the sauce.

For added bite, add garlic to the blender.

You can use soy milk or coconut milk instead of the water to make it creamier.

Herbs can give it another angle on the flavour or you can add some chopped fresh chives.

If you’d like to make it into more of a dip with a body of substance, add some cooked white beans or chick peas to the blender and it will become thick like a dip.

The possibilities are endless!
