Make this tasty quinoa avocado and spinach salad and enjoy a healthy, delicious starter, main course or side dish. I love the combination of different flavours: savoury spinach, sweet orange and nutty quinoa.
Red quinoa gives more bite to the tooth and it looks more contrasting so I prefer the red one for this salad, but the white quinoa’s also useable if you don’t have any red.
How to Cook the Quinoa
The most important thing about quinoa is that you wash it well. And then wash it again. And again.
Quinoa’s bitter if you don’t wash it enough, so it’s better to overdo the washing part! When the water’s clean, put the quinoa in a pan and cover with water so that it’s just covering the quinoa by about a centimetre and add salt to taste. Or better still, for perfect quinoa, use a rice cooker.
Put on a tightly fitting lid and bring the water to the boil. Cover and cook. After 10 minutes check the quinoa and stir once. Keep checking until you see little sprouts sprouting out of the quinoa seeds. If necessary you can add a little extra water.
When the quinoa sprouts, it’s ready. The water should have all been absorbed by that point.

- 1 avocado, sliced
- 1 orange, sliced
- 1 tomato. sliced
- 2 spring onions or 1 fresh young onion,
- 1 cup red quinoa, cooked
- put the spinach onto a plate.
- Arrange the other ingredients on top and finish with a layer of red quinoa.
- Sprinkle on a little salt, the juice of half an orange and a generous drizzle of olive oil on top.
