This spicy chickpea snack’s so easy to make, plus it’s filling, nutritious and delicious. You can nibble at these chickpeas at any time of the day, or tuck into a whole bowl full. And what’s better is you can eat them hot or cold.
I love to make up a bowl of these and just eat them throughout the day. They’re tasty and easy and that’s what I love. I like them best really spicy but the amount of chilli you put into this recipe is entirely a personal thing.
The basic recipe is the chickpeas, cumin, chilli powder and turmeric. In this dish I’ve added asparagus but you can also make it without, or with something different.
Heat some olive oil in a frying pan and add the chopped asparagus spears and a little salt. Fry for 5 minutes, stirring occasionally.
When the asparagus pieces are almost done, add the cumin and chilli and stir fry.
After 2 minutes add the chickpeas and fry on a high heat. Sprinkle with salt and add 1 tsp turmeric.
Fry for about 5-6 more minutes or until the chickpeas are hot through and begin to start popping. Put into a serving bowl and voila, ready to go!
When you want to eat, first squeeze on the lemon juice to give an extra tang to the taste.
A quick and easy snack to prepare and you can eat it hot or straight from the fridge.
