Tasty Vegan Nachos Recipe

Ingredients for tasty vegan nachos

 

This tasty vegan nachos recipe is satisfying and always a popular hit with everyone. It needs a bit of preparation but is easy to make.

First of all, prepare your chilli beans. To do this: chop up 1 onion, 1 green pepper, 2 mushrooms, 2 tomatoes & 1 red chilli. You’ll also need 2 cloves garlic, 1 red chilli, some cumin and oregano.

Heat a little olive oil in a pan and add the crushed garlic. After a moment add the finely chopped onion and red chilli. Sprinkle with salt and stir fry. Next, add the chopped green pepper, 3 tsp cumin and 1 tbs of oregano.

After a few minutes, add the chopped mushrooms to the pan and leave for 5 minutes until all the ingredients are cooked through. Add the beans and fry, mashing some of the beans up with a potato masher. Leave to cook for another 6-7 minutes and then add 1 tin of chopped tomatoes. For the nachos: prepare some nut cream dip, shredded lettuce, chopped tomatoes, chopped cucumber & jalapeño chillis.

Cover a plate in some shredded lettuce and place the nacho crisps on top, followed by chilli bean mix, spicy red pepper sauce, guacamole and vegan nut sauce. Sprinkle chopped tomatoes, jalapeños and chopped cucumber on top.

Ingredients

  • gluten free nacho crisps
  • homemade guacamole
  • homemade vegan cashew spread (aka vegan sour cream)
  • homemade chilli bean sauce
  • homemade hot n spicy red pepper sauce
  • chopped cucumber
  • chopped tomato
  • shredded lettuce
  • jalapeño peppers

Instructions

  1. Layer a plate with shredded lettuce
  2. Place the gluten free nacho crisps on top
  3. On top of the crisps add the hot chilli bean sauce and a sprinkling of chopped cucumber and tomato
  4. Serve with guacamole, hot n spicy red pepper sauce and vegan cashew sour cream dip

Notes

The preparation time is after you've pre-prepared the separate dishes like chilli bean sauce, guacamole, hot n spicy red pepper sauce and the vegan cashew sour-cream spread.
